Das ich (wir) Gemüse lieben, muss ich euch nicht erzählen. In jeglicher Form, Variante und Zubereitung. Mein Mann, unser 2 Wochen altes Baby und ich sind über den Markt spaziert und konnten nicht ohne etwas Gemüse nach Hause gehen. Daraus habe ich Briam zubereitet.
Briam ist ein griechisches Gemüsegericht aus dem Ofen. Ähnlich wie ein Gemüseauflauf. Es ist sehr einfach gehalten, die Gewürze werden sparsam dosiert und der unfassbare Geschmack kommt durch das gute Gemüse zustande. Ich liebe es pur, mit bisschen Feta und schwarze Oliven serviert. Fladenbrot kann man auch dazu reichen. Es am nächsten Tag mit Reis oder Nudeln essen… oder aber auch Briam zum Grillen neben verschiedenen Salate reichen.
Es ist ein schnelles Gericht, mit überschaubaren Zutaten. Vielleicht wird es schon bald euer neuer Gemüseküchenfavorit? 🙂
Briam kann man auch rustikal anrichten und zubereiten. Ich liebe es aber, wenn es schön in der Form platziert wird.
Für 4 Personen.
Folgende Zutaten werden benötigt:
- 3 Kartoffeln
- 1 Zucchini
- 1 Melanzani
- 2 Jungzwiebeln
- 2 Knoblauchzehen
- Paprika, rot und grün
- 2-3 EL Olivenöl
- etwas Meersalz
- etwas Pfeffer
- 1 EL getr. Thymian
- 1 EL getr. Petersilie
- 50 ml Wasser
- 250 ml passierte Tomaten
Außerdem:
- Rundblech/Springform
- kleiner Topf

Zubereitung:
Das Gemüse putzen, waschen und vorbereiten.
Melanzani, Zucchini, Kartoffeln und Paprika in Scheiben schneiden. Bei der Paprika ist es etwas schwierig, rechteckige Stücke gehen auch. Meine Scheiben sind circa 0,5 cm dick.
Jungzwiebel und Knoblauch schneiden.
Die Form mit 1 EL Olivenöl einfetten. Melanzani, Zucchini, Kartoffeln und Paprika drin schichten. (Oder reinwerfen, für die rustikale Art 😀 )
Den Ofen auf 180°C Ober- und Unterhitze vorheizen.
1-2 EL Olivenöl in einen kleinen Topf geben, Jungzwiebel und Knoblauch andünsten. Meersalz, Pfeffer und die getrockneten Kräuter hinzu. Mit Wasser und den passierten Tomaten ablöschen. Kurz aufkochen lassen, dann über das Gemüse genießen.
Für 30-35 Minuten backen, eventuell nach 20 Minuten Backzeit mit Backpapier bedecken, damit das Gemüse nicht zu dunkel wird.
Warm servieren und das Briam genießen! 🙂 Vielleicht mit einem Gläschen Rotwein…
