Domatokeftedes ist eine Speise, welche bei Tomatenliebhaber:innen das Herz höher schlagen lässt. Saftig, aromatisch und dennoch knusprig.

Die Domatokeftedes sind ein ideales Gericht in der orthodoxen Fastenzeit, denn sie werden schon immer rein pflanzlich, also vegan, zubereitet.

Das Rezept, welches aus meiner Familie stammt, ist wirklich richtig einfach zum Nachkochen. Ihr benötigt keine außergewöhnlichen Zutaten, kein großes Kochtalent und keine Küchenmaschine.

Tomatenpuffer, wie man die Domatokeftedes ins deutsche übersetzen könnte, werden auf Santorini gerne als Vorspeise serviert. Dazu reicht man Salate und verschiedene Sauce. Ich liebe sie mit Knoblauchsauce. Oder mit Tzatziki.

Die Kräuter waschen und kleinschneiden, falls frische verwendet werden. Tiefgekühlte oder getrocknete Kräuter eignen sich ebenfalls.

Die Tomaten waschen, den Stunk entfernen und sie kleinschneiden. Eine kleine Zwiebel schälen, zerkleinern und mit den Tomatenstücken in eine Schüssel geben.

Auch Meersalz, Pfeffer und Kräuter in die Schüssel geben. Mit sauberen Händen die Zutaten kneten, quetschen und massieren. Für ungefähr eine Minute.

Nun circa 100g Mehl unterheben. Im Video sieht man sehr gut welche Konsistenz der „Tomatenteig“ haben sollte. Dieser muss nun kühlen und ruhen. Mindestens eine Stunde, je länger ist aber desto besser. Daher ihn gerne über Nacht in den Kühlschrank stellen.

Nach der Kühlzeit wird noch etwas Mehl eingearbeitet, da die Tomaten oft etwas Saft gelassen haben. Außerdem kommt das Backpulver hinzu. Kurz unterheben.

Nun eine Pfanne mit dem Öl auf die Herd stellen und erwärmen. Den Tomatenteig mit einem Löffel in die Pfanne geben und von beiden Seiten knusprig, leicht braun braten oder ausbacken. Ab und an wenden. Fortfahren, bis kein Teig mehr übrig ist.

Wenn gewünscht auf etwas Küchenpapier das überschüssige Öl abtropfen lassen.

Warm oder kalt servieren.
