Kalte gefüllte Paprika I Sommer Gericht

Gefüllte Paprika essen wir sehr gerne, aber im Sommer sind sie uns fast zu mächtig. Da greifen wir viel lieber auf kalte gefüllte Paprika zurück. Ganz ohne Herd und schnell zubereitet. Als Hauptgericht, Beilage oder Snack servierbar.

Ich zeige euch, wie wir sie am liebsten haben. Das Rezept lässt sich auch wunderbar abwandeln, erweitern und nach euren Belieben umbauen. Ich schaue immer was ich im Kühlschrank habe und fülle damit die Paprika.

Kalte gefüllte Paprika (vegetarisch)

Meine Füllung ist vegetarisch gehalten, ihr könnt den Feta aber auch durch Räuchertofu oder eingelegten Tofu ersetzen.

Für 8 Stück.
Folgende Zutaten werden benötigt:
200 g Reis, vorgekocht (vom Vortag)
150-200 g Feta
2 Jungzwiebeln
etwas Zitronensaft
2 EL Petersilie, TK
(Meer-)Salz
2 Prisen Pfeffer
8 gegrillte und eingelegte Paprika

Zubereitung:

Die Jungzwiebeln säubern und in Ringe schneiden. Den Feta (oder Räuchertofu) würfeln. Zusammen mit dem Reis in eine Schüssel geben.

Übrigens, wenn ihr ganz auf das Kochen, auch am Vortag, verzichten möchtet: Es gibt auch schon vorgegarten Reis zu kaufen. Auch in den unterschiedlichsten Geschmacksrichtungen.

Mit Zitronensaft, (Meer-)Salz, Pfeffer und Petersilie abschmecken.

Die Paprika, wenn sie vom Einlegen noch sehr feucht sind, mit etwas Küchenpapier abtupfen. Mit einem Löffel die Füllung in die Paprika geben. Auch die anderen Paprika füllen.

Gleicht servieren oder noch kühl stellen.

Ihr könnt sie auch zu Gegrilltem reichen, quasi als Alternative zu Salat. Oder zu den Paprika Brot und eine Joghurtsauce anbieten. Für die Arbeit, zum Picknick, in der Jausenbox… Ihr seht schon, es gibt fast keine Ausrede mehr sie nicht nachzumachen. 🙂
