Ciuperci în sos de roşii also Pilze/Champignons in Tomatensauce ist ein tolles Beilagengericht. Ich finde sie einfach nur himmlisch zu Polenta oder Brot. Aber auch zu vielen anderen Speisen machen sie sich gut.

Das Rezept stammt ursprünglich von der rumänischen Oma. Einige von euch wissen ja mittlerweile wo mein Mann seine Wurzeln hat. In meinem letzten Vlog hatte ich euch auch etwas davon berichtet. Auf jeden Fall habe ich das Rezept jetzt thermomixtauglich umgeschrieben und es gelingt sehr gut darin. Ich bin sowieso ein Fan von Saucen aus dem Thermomix, man kann mit ihm diese einfach so gut einkochen.

Ciuperci în sos de roşii (vegan)

Als Beilage für 4 Portionen.
Folgende Zutaten werden benötigt:
500 g Pilze/Champignons
Saft einer halben Zitrone
1 Zwiebel
2 Knoblauchzehen
20 g Öl
400 g gehackte Dosen-Tomaten
1/4 TL Muskatnuss, gerieben
Salz
Pfeffer
50 g Rotwein oder Gemüsebrühe
1 EL Tomatenmark
Prise Zucker
Petersilie

Zubereitung:

Pilze/Champignons säubern, größere halbieren und in eine Schüssel geben.

Zwiebel und Knoblauchzehen schälen, die Zwiebel habieren und zusammen mit dem Öl in den Mixtopf geben. Für 5 Sekunden /-/ auf Stufe 5 zerkleinern. Anschließend gleich für 3 Minuten /100°C/ auf Stufe 1 andünsten.

Die Champignons in der Zwischenzeit mit dem Zitronensaft vermischen und ins Garkörbchen geben.

In den Mixtopf die gehackten Dosen-Tomaten, Rotwein oder ersatzweise Gemüsebrühe, Muskatnuss, Salz und Pfeffer geben.
Da Garbkörchen einsetzen und alles für 15 Minuten /Varoma/ Stufe 1 garen.

Die Champignons vorsichtig in die Sauce geben und nochmals darin garen. Für 5 Minuten /90°C/ Linkslauf / Sanftrührstufe. Mit dem Tomatenmark und Zucker abschmecken, alles mit einem Spatel behutsam vermengen. Eventuell noch etwas salzen und pfeffern.

Mit frischer Petersilie bestreut servieren. Am besten warm, aber auch kalt kann man es gut genießen.

Tipp: Ich koche nicht oft mit Wein, aber es ist in diesem Gericht so vorteilhaft. Rumänien hat wunderbare Weine zu bieten. Wenn ihr einen davon besitzt, immer rein damit -immerhin werden ja nur 50 g benötigt. 🙂
