Kuku Sabzi I persische Kräuter Patties

Eigentlich würde ich jetzt anfangen, Kuku Sabzi euch als Kräuter Omelette aus dem Iran vorzustellen. Aber meine Freundin, von der ich das Rezept habe, würde durchdrehen…und sicher hätte ich den Hate vieler Iraner auf mich gezogen. 😀

Es sind Kräuter Patties, ursprünglich mit Eiern zubereitet. Sie schmecken einfach nur köstlich, sowohl warm als auch kalt gegessen. Nach einer sehr langen Reisebusfahrt hat meine Freundin sie mir zubereitet, ich habe ihr dabei über die Schultern geschaut und mir gleich das „Rezept“ im Kopf abgespeichert. „Rezept“, weil es eigentlich keine genauen Mengenangaben gab. Für euch werde ich sie aber festhalten, damit ihr auch im Genuss der Kuku Sabzi kommen könnt. Sie sind übrigens auch glutenfrei, benötigen nur 4 Zutaten und wirklich einfach in der Zubereitung.

Kuku Sabzi

Ich mache meine Kuku Sabzi in Pancakegröße, aber die Größe ist euch überlassen. Manche zubereiten ihre Kuku Sabzi wirklich riesig, ich finde die kleinen schöner zum Verspeisen und anrichten.

Für 8-10 kleine Stück.

Folgende Zutaten werden benötigt:

  • Pfanne
  • etwas Öl
  • ein Dip/Joghurt zum Dazureichen
Kuku Sabzi

Zubereitung:

Kichererbsenmehl mit Meersalz verrühren. Langsam das Wasser einrühren. Der Teig sollte die Konsistenz eines Waffelteiges haben. Dann folgen auch schon die Kräuter.

Kuku Sabzi Teig

Eine Pfanne aufsetzen und erhitzen. Je nach Pfannenart und Antihaftbeschichtung diese etwas einölen.

Sobald die Pfanne heiß ist je 2 Esslöffel pro Kuku Sabzi in die Pfanne geben und rund streichen.

Sobald die Oberfläche matt wird, wenden und von der anderen Seite anbraten.

Danach die Patties aus der Pfanne nehmen und mit dem restlichen Teig solange fortfahren, bis er aufgebraucht ist.

Ihr könnt die Kuku Sabzi wie Brot zu einer Speise servieren, auch zu Curry und Saucen passen sie hervorragend. Oder ihr macht einen schnellen Dip. Mein Favorit ist da ganz schlicht aber lecker:

(Soja-)Joghurt + etwas Meersalz + Chiliflocken + Pfeffer
