Zweite Woche Schule nach den Ferien, wenige Wochen bis zu den nächsten Ferien, das Wetter ist grau in grau und irgendwie ist so viel zu tun. Pro Woche mindestens 3 Termine… ich bin ehrlich, die Motivation abends zu kochen liegt dort, wo die Titanic sich befindet… sehr tief unten.

Aber zum Glück habe ich einige Blitzrezpte auf Lager, wie dieses heute. Mit diesen One pot Gnocchi bekommt ihr euren Kühlschrank leer, alle Reste sind willkommen und ihr stellt in 10 Minuten ein fertiges Gericht auf dem Tisch.

Für 4 Portionen.

Zutaten können nach Belieben verdoppelt werden.

Folgende Zutaten werden benötigt:

Als Gemüse verwende ich einen Mix aus frischen und Tiefkühlkost. Bei mir sind es Karfiol, Erbsen, Karotten und Brokkoli.

Das Öl in einem Topf geben, erwärmen und das Gemüse hineingeben. Nach 1 Minuten die Gnocchi hinzugeben.

Mit Wasser und Hafersahne ablöschen. Wer mag, kann jetzt schon würzen. Ich würze zum Schluss, da ich eine Portion vorher für mein Baby abnehme.

Die Petersilie natürlich auch hinzugeben. Alles aufkochen und dann sanft 8 Minuten weiterköcheln lassen.

Den Herd ausschalten und den Frischkäseersatz hinzugeben. Ich kann euch diesen empfehlen, der ist selbstgemacht und echt köstlich.

Wenn noch nicht geschehen würzen. Anschließend abschmecken und servieren.

Schmeckt warm, aber auch kalt!
