Thermomix-Thursday #17 -Zwetschgenkuchen und Gurkensuppe

Manchmal steht man etwas im Zwiespalt. Einerseits freut man sich über die kälteren Temperaturen, da man wieder viel mehr das Backrohr zum Schwitzen bringen kann, andererseits wird es so früh dunkel, die Sonne ist ein seltener Gast und man verkühlt sich schnell. Verkühlt habe ich mich in diesem Jahr oft, sogar im Sommer war ich verkühlt (fragt mich bitte nicht wie ich das geschafft habe) und natürlich musste ich mir jetzt auch gleich beim ersten grauen Wölkchen wieder eine Grippe an den Hals hängen lassen. Aber das ist für mich nicht mal das schlimmste, viel schlimmer finde ich, dass mein Mann und die Kinder sich IMMER bei mir anstecken müssen. Wir müssen dann sozusagen die „Suppe“ gemeinsam auslöffeln…Suppe ist ein gutes Stichwort.

Kalte, griechische Gurkensuppe (vegan)

Ich bin kein großer Suppenesser, aber diese Suppe ist
wirklich genial. Schön frisch, liegt nicht schwer im Magen und
ist in wenigen Minuten zubereitet.
Für 4 Portionen.
Folgende Zutaten werden benötigt:
♥1 Gurke, gewaschen und entkernt
♥250g Wasser, kaltes
♥250g (Soja-)Joghurt
♥150g (Mandel-)Sahne
♥1 Knoblauchzehe
♥2 EL Schnittlauch
♥Salz
♥Pfeffer
♥1 TL Gemüsebrühpulver oder Paste
♥1/2 Tl geräuchertes Paprikapulver
Zubereitung:

Die Kalorien, die man sich bei der Suppe spart, kann man sich
mit diesem Kuchen wieder anfuttern. Es ist ein schnell gemachter
Kuchen, der nicht viel Aufwand benötigt, aber sicher jeden gut
schmecken wird.
Zwetschgenkuchen vom Blech (vegan)
Für ein kleines Blech.
Folgende Zutaten werden benötigt:
♥100g Zucker
♥200g Alsan oder Margarine
♥300g Mehl
♥20g Mandelmilch
♥1 TL Zimt
♥circa 400g Zwetschgen
Zubereitung:
Zwetschgen waschen und den Kern entfernen. (Ich schneide sie einmal in der Hälfte durch und entferne dann den Kern)
Die restlichen Zutaten in den Mixtopf geben.
Für 15 Sekunden /-/ auf Stufe 5 zu einen Teig verarbeiten.
Den Ofen auf 180°C Ober-/ und Unterhitze vorheizen.
2/3 des Teiges in auf dem Backblech verteilen.
Die Zwetschgenhälften auf dem Teig verteilen und den restlichen Teig drüber zerzupfen.
Das Kuchenblech in den Ofen geben.
Für circa 40-45 Minuten backen.
Anschließen gut auskühlen lassen, sonst krümelt der Kuchen zu sehr.
& dann genießen. 🙂
